Scotch Pancakes

It's Pancake day, so for February's blog I thought I'd share my families Scotch Pancake recipe. This recipe is really simple and makes scrumptious pancakes! My favorite thing to put on pancakes is Nutella and banana but with these pancakes you can keep it as simple or as decadent as you like. Hope you have a great Pancake day and enjoy this recipe...

Ingredients
  • 6 oz Self Raising Flour
  • 1.5 oz Caster Sugar
  • 1 tsp Baking Powder
  • 1 Egg
  • 200 ml Whole Milk
  • A dash of oil/ butter for cooking.
Method
  1. Sift together the Flour, Sugar and Baking Powder and then mix in a large bowl.
  2. In a separate jug, whisk together the egg and the milk. Then make a well in the flour mixture and pour in the milk mixture, then whisk thoroughly, until one uniform batter.
  3. Set the batter aside and leave for 30 minutes before frying the pancakes.
  4. On a medium-high heat, heat a tsp amount of oil in a frying pan, and then dollop a soup spoon amount of batter into the pan and spread into a circular-pancake shape (or whatever shape you like). Allow this to cook until little bubbles start emerging on the uncooked side of the pancake, this means it's ready to be flipped. When both sides are cooked....bon appétit!
