Cookies
- 4 oz Butter
- 4 oz Demerera Sugar
- 4 oz Self Raising Flour
- 1 oz Cocoa Powder
- 1 tbsp Whole Milk
- 2 oz Dark Chocolate Chips
- 1 oz Milk Chocolate Chips

- 2 oz White Chocolate
- 1/4 tsp Green Food Colouring Paste
Method
- Firstly Pre heat the oven to 180℃ and line two baking trays.
- Cream together the butter and the sugar until light and fluffy.
- Sift in the flour in two stages, until fully incorporated.
- Next sift in the cocoa powder and add the milk.
- Now mix in the chocolate chips and roll into tea spoon sized balls and place on baking sheet allowing enough room for spreading.
- Bake for 12 minutes then allow to cool on a cooling rack.
- Once fully cooled, melt the white chocolate over a Bain Marie.
- Take two desert spoons of the white chocolate and place in a piping bag fitted with a very small round nozzle and leave the rest of the chocolate in the bowl.
- Now dip 1/6 of each cookie in the white chocolate and place on a cooling rack.
- Before the chocolate sets pipe drips of white chocolate on the cookie creating a Christmas pudding effect. Repeat this for all the cookies and allow chocolate to set.
- With the remaining white chocolate mix in the green food colouring, and pour in a piping bag fitted with the same nozzle as in step 8.
- Finally pipe a holly looking design on the white chocolate and leave to set.
