Christmas Pudding Cookies

IT'S CHRISTMAS!! So for this months blog I have created a Christmas themed confection. Christmas pudding double chocolate chip cookies. These indulgent cookies are perfect for baking in the week between Christmas and new years, and a tasty treat to go along with all of the other sweet Christmas delights. So here's the blog....and Merry Christmas!

Ingredients
Cookies
  • 4 oz Butter
  • 4 oz Demerera Sugar
  • 4 oz Self Raising Flour
  • 1 oz Cocoa Powder
  • 1 tbsp Whole Milk
  • 2 oz Dark Chocolate Chips
  • 1 oz Milk Chocolate Chips
Decoration
  • 2 oz White Chocolate
  • 1/4 tsp Green Food Colouring Paste
Method
  1. Firstly Pre heat the oven to 180℃ and line two baking trays.
  2. Cream together the butter and the sugar until light and fluffy.
  3. Sift in the flour in two stages, until fully incorporated. 
  4. Next sift in the cocoa powder and add the milk.
  5. Now mix in the chocolate chips and roll into tea spoon sized balls and place on baking sheet allowing enough room for spreading. 
  6. Bake for 12 minutes then allow to cool on a cooling rack.
  7. Once fully cooled, melt the white chocolate over a Bain Marie.
  8. Take two desert spoons of the white chocolate and place in a piping bag fitted with a very small round nozzle and leave the rest of the chocolate in the bowl.
  9. Now dip 1/6 of each cookie in the white chocolate and place on a cooling rack.
  10. Before the chocolate sets pipe drips of white chocolate on the cookie creating a Christmas pudding effect. Repeat this for all the cookies and allow chocolate to set.
  11. With the remaining white chocolate mix in the green food colouring, and pour in a piping bag fitted with the same nozzle as in step 8.
  12. Finally pipe a holly looking design on the white chocolate and leave to set.
