Dutch Apple Muffins

This months blog marks one year since my first blog, so I thought i'd be experimental, and develop a new muffin recipe. It's Autumn which means our house is full of cooking apples, picked from my Grandparents tree's, so I have incorporated the apples into the recipe by reinventing my Dutch Apple Pie into a muffin recipe. This muffin is full of autumnal flavours and perfect for a cosy September evening. So here's the recipe....
Ingredients
Apple filling
  • 1 medium sized cooking Apple
  • 1 1/2 tbsp plain flour
  • 2 oz demerara sugar
  • 1 oz granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1 tbsp lemon juice
Muffin mixture
  • 4 oz butter
  • 8 oz demerara sugar
  • 2 eggs
  • 8 oz self raising flour
  • Pinch of salt
  • 1/2 tsp ground cinnamon
  • I tbsp milk
Crumble Recipe
  • 3 oz plain flour
  • 1 oz caster sugar
  • 1 oz demerara sugar
  • 2 oz butter 
  • 1 tsp ground cinnamon
Apple Sauce
  • 1 medium cooking apple
  • 1 tbsp demerara sugar
  • 100ml hot water
  • 1 tsp ground cinnamon
Method
  1. Pre heat your oven to 180℃ and line your muffin tin with cupcake cases.
  2. Mix together all of the 'apple filling' ingredients apart from the cooking apple. Dice the apple into roughly 0.5cm² cubes and toss in the the 'apple filling', then set aside.
  3. To make the muffin mixture; cream together the butter and sugar, until light and fluffy.
  4. Beat in the eggs and then gradually sift in the flour, salt and cinnamon. 
  5. Stir in the apple filling made in step 2 and add milk. Then scoop into muffin case's, filling about 3/4 way up the case.
  6. To make the crumble; rub together all ingredients  until 'crumble-like' crumbs begin to form.
  7. Sprinkle about a dessert spoon amount of crumbs on top each of the un-baked muffins.
  8. Bake for 25-30 minutes.
  9. To make the apple sauce; chop the apple up into fairly small chunks and slowly simmer along with the other ingredients in a medium sized pan over a medium heat. Stir occasionally to bring the sauce together.
