Mud Cake

This months blog is a recipe that I grew up on, it's a simple recipe but very indulgent. This recipe is called 'mud cake' but I promise there is no actual mud in it, it gets it's name from the rich dark chocolate colour and flavour. A chilled slice of mud cake, straight out of the fridge is the perfect treat for a hot summers day. So here is the Recipe...


Ingredients

  • 8 oz Crushed Digestive biscuits
  • 2 tbsp Golden syrup
  • 2 tsp Brown sugar
  • 1 tbsp Cocoa powder
  • 1 oz Butter
  • 4 oz Raisins/ Sliced almonds/ nuts (or any dried fruit or nuts you want)
  • 6 oz Dark chocolate (or milk chocolate)
  • 1 oz White chocolate (for decoration)

Method
  1. Over a medium heat melt together the golden syrup, sugar and butter until one uniform mixture.
  2. Sift in the cocoa powder and mix in the the crushed digestives and dried fruit/ nuts.
  3. Press into a greased tin (29cm x 22cm), leave to set in the fridge for minimum 20 minutes.
  4. Melt the dark chocolate and spread evenly over the set digestive mixture. Melt the white chocolate and drizzle over the dark chocolate (whilst still wet).
  5. Leave to set in the fridge minimum 2 hours, and slice into squares.
