Ginger Snap Biscuits

This is my families recipe for perfect Ginger snap biscuits. This 'snappy' recipe creates a great balance of spicy ginger and sweet, buttery biscuit. These ginger biscuits are great paired with a warm hot chocolate on a cold February afternoon. So here's the recipe...

Ingredients

  • 4oz Sel Raising Flour
  • 1/2 tsp Bicarbonate of Soda
  • 2 tsp Ground Ginger (or 1 tsp if you want it less gingery)
  • 2oz butter
  • 2oz sugar
  • 2oz golden syrup 
  • pinch of salt (optional)
Method
  1. Pre heat the oven to 180℃
  2. Sieve together the self raising flour, bicarb and ginger together in a bowl, and set aside.
  3. Melt together the golden syrup, sugar and butter over a low heat.
  4. Add the dry ingredients to the wet ingredients gradually and mix together into a loose dough.
  5.  Roll teaspoon amounts of dough into balls using floured hands and place on a greased baking tray. This recipe should make about 20-24 biscuits.
  6. Place in the oven for 10-12 minutes until golden brown.
